Kofta kadhi recipe is more popular in different regions of the country.
The thought kofta kadhi comes into my mind it feels salty-sweet-tangy kadhi with crispy pakora.
- Kadhi is a made with sour yogurt, besan (gram flour), coriander seeds, cumin and indian pure spices.
Today we are going to make Punjabi style kadhi which is thick and full with gravy. Different regions vary in kadhi, gujarati and maharashtrian have thin and little sweeter with distinct aroma of curry leaves or sugar. Bihari kadhi with besan badis, spicy marwadi kadhi and it’s a long list of kadhi. This is the recipe with dahi besan kadhi with crispy pakora in Punjabi style.
How to make kofta kadhi
Crushed the dhaniya seeds
Crushed dhaniya is important ingredient in kofta kadhi recipe. Before starting this recipe, slightly crush dhaniya.
Make dahi besan mixer
Take large mixing bowl mix all these below given ingredients:
2 cup dahi
1/3 cup besan (use fine besan with grinding)
1 tsp Turmeric powder (haldi powder)
3 tbsp crushed dhaniya
1/2 tsp red chilli powder
1 tbsp ginger garlic paste
Salt to taste
Mix it properly
Add 7-8 cup water into dahi besan batter and mix well.
Saute onions with spices
Add 1 tbsp ghee
1 tsp jeera (cumin)
1/2 tsp methi dana
4-5 pepper corn (kali mirch)
2-3 whole red chilli
1 medium size (sliced onion)
1 tsp Hing
Saute for 1 minute.
Saute potato & cook with dahi besan mixer for 25-30 minute
2 medium size cutted potato and saute for 2-3 minute. Add dahi besan mixer which we made few minute ago. Cook 25-30 minute for medium flame.
After cook it add dhaniya which astonishing flavour.
Make pakoda batter
Kofta (pakoda) easily make in 8-10 minute. While cooking the kadhi you can make this pakoda.
In mixing bowl, mix below given ingredients: 2-3 medium size sliced onion. 1/2 tsp crushed ajwain, green dhaniya cutting, 1 medium size potato, 1 tbsp red chilli powder, 1/4 tsp Turmeric powder, 1 tbsp coriander powder.
Add salt as per taste, 1 cup besan, 1/4 tsp baking soda1 tsp mango powder. Mix this all ingredients by hand. Little juice from comes from veggies onion and potato. Add necessary water while mixing and make perfect batter.
Double fry the pakoda
Heat oil into the pan. Fry the pakoda. Once you fry. Fry pakoda second time for 10-15 second. Double frying makes pakoda very cripsy.
Fry papad
Papad is the perfect compliment with pakoda kadhi. It will make more delicious dish.
Tempering the kadhi
Tempering kadhi with 1 tsp ghee 1 tsp cumin (jeera), 1/2 tsp hing, 2-3 whole red chilli, 1 tsp coriander powder, 1 tsp red chilli powder.
Now kofta kadhi is ready for serve!
