Fanas Sabji Recipe

Make classic fanas/kathal sabji recipe at home, as delicious as restaurent dishes. These fanas recipe is more flavourful and easy to make with delicious gravy.

  • Fanas sabji, a popular dish in Indian cuisine, is made from jackfruit (known as “fanas” in marathi & gujarati).
    The raw, green jackfruit is cooked with spices like turmeric, cumin, and chili powder, along with onions, tomatoes, and garlic. It’s often finished with cilantro for a flavorful, hearty vegetable curry.

How to make fanas sabji

Serving person: 4 from using 500 gm Fanas/Kathal

Make flavourful water with adding salt, haldi powder

๐Ÿ‘‰ Add right amount of water to cooker with adding 1.5 teaspoon salt, 1/2 teaspoon haldi powder and stir well.

Add ginger, black pepper & kathal/fanas

Next add the following ingredients:
๐Ÿ‘‰ 1/2 Inch ginger
๐Ÿ‘‰ 1 teaspoon black pepper
๐Ÿ‘‰ 500 gm kathal
Mix well all ingredients properly.

Boil it at high flame (Only 1 whistle)

๐Ÿ‘‰ Simply cook with high flame (Only 1 whistle)
๐Ÿ‘‰ Cook fanas until it reach at 60%.

Separate boiled kathal/fanas & flavourful water

๐Ÿ‘‰ Take out 60% boiled fanas.
๐Ÿ‘‰ Separate the water & fanas.
๐Ÿ‘‰ Remember, remain water will use later.
๐Ÿ‘‰ Now, the time to onion tomato curry making.

Saute kathal/fanas in mustard oil

๐Ÿ‘‰ Add 1/2 cup mustard oil in cooker and saute the kathal.
๐Ÿ‘‰ Fry fanas until it’s get slightly brown colour. (Only for 2-3 minutes, Not too much)

Shake until kathal/fanas gets brown colour and take out

๐Ÿ‘‰ After fry it, take it out.

Add all essential masala

๐Ÿ‘‰ In remaining oil, add essential masala that needed for making onion tomato curry, which are following:
๐Ÿ‘‰ 1 Tej patta
๐Ÿ‘‰ 1 teaspoon jeera
๐Ÿ‘‰ 4 choti elaichi
๐Ÿ‘‰ 1 badi elaichi
๐Ÿ‘‰ 9-10 kali mirch
๐Ÿ‘‰ 4-5 Laung
๐Ÿ‘‰ Dal chini

Saute the onions

๐Ÿ‘‰ Add cutting onions
๐Ÿ‘‰ Saute it for 2-3 minutes until colour gets brown.

Add ingredients: Ginger, Dhaniya stems, Sukhi mirch, Green mirch cutting, Haldi powder, Mirch powder

Then, add the following ingredients:
๐Ÿ‘‰ 1 Inch ginger
๐Ÿ‘‰ Coriander stems
๐Ÿ‘‰ 3 Dried chillies
๐Ÿ‘‰ 3 Green chillies
๐Ÿ‘‰ 1 teaspoon Red chilli powder
๐Ÿ‘‰ 1/2 teaspoon Haldi powder
Stir it and mix well.

Add tomato & essential masala (Salt, dhaniya powder, garam masala)

Next add the following ingredients:
๐Ÿ‘‰ 2 Tomato cutting
๐Ÿ‘‰ 1 teaspoon Salt
๐Ÿ‘‰ 1 teaspoon Dhaniya powder
๐Ÿ‘‰ 1 teaspoon Garam masala/Meat masala

Make a curry

๐Ÿ‘‰ For making a curry, add fanas water which separated before, and boil it on high flame. ( 2-3 whistle)

Add fried kathal/fanas & simple water and boil again with low flame

๐Ÿ‘‰ Now, the time to add 60% boiled fanas and 1 cup water. Boil it at law flame. (Only 1 whistle)

Now, Fanas/Kathal sabji is ready to serve.

Step by step process

  1. Make flavourful water with boiling 500 gm kathal/fanas in 1.5 teaspoon salt, 1/2 teaspoon haldi powder, 1/2 Inch ginger, 1 teaspoon black pepper.
  2. Boil it at high flame (Only 1 whistle).
  3. Take out & separate boiled kathal/fanas & flavourful water.
  4. Fry kathal/fanas in 1/2 cup mustard oil. Take out after kathal/fanas gets slightly brown colour and take out.
  5. Fry onions in remain mustard oil with all essential masala:
    ๐Ÿ‘‰ 1 Tej patta
    ๐Ÿ‘‰ 1 teaspoon jeera
    ๐Ÿ‘‰ 4 choti elaichi
    ๐Ÿ‘‰ 1 badi elaichi
    ๐Ÿ‘‰ 9-10 kali mirch
    ๐Ÿ‘‰ 4-5 Laung
    ๐Ÿ‘‰ Dal chini (For 2-3 minutes).
  6. Add ingredients:
    ๐Ÿ‘‰ 1 inch Ginger
    ๐Ÿ‘‰ Dhaniya stems
    ๐Ÿ‘‰ 3 Dried mirch
    ๐Ÿ‘‰ 3 Green mirch cutting
    ๐Ÿ‘‰ 1/2 teaspoon Haldi powder
    ๐Ÿ‘‰ 1 teaspoon Mirch powder.
  7. Add 2 tomato & essential masala (1 teaspoon Salt, 1 teaspoon dhaniya powder, 1 teaspoon Garam masala/ Meat masala)
  8. Make a curry (2-3 whistle).
  9. Add fried kathal/fanas & flavourful water and boil again with low flame.
