- Gud Chai, also known as Jaggery Tea, is a traditional Indian tea made by sweetening tea with jaggery instead of refined sugar.
Jaggery, known as “gud” in Hindi, is an unrefined sugar made from sugarcane juice, and it’s often considered a healthier alternative in compair to use refined sugar because gud retains more natural minerals and vitamins.
Make flavourful & spicy tea with adding spices like ginger, cardamom, or fennel seeds can be added for extra flavor. It’s optional, it depends on person what tate he/she loves. Whatever spices you like you can use. I prefer ginger so this gud recipe has ginger flavour.
Some people use milk and some aren’t. It is optional, but I recommend you add milk to create a richer, creamier tea.
Let boil 1 cup water till reach at boiling state
Take 1 cup water in tea pan. Heat at low flame. ( Here we are making 2 cup tea therefore we are using 1 cup water, and later we will use milk as same proportion.
Add ginger, gud(jaggery) & chai leaves
After lit boil water add 1 inch ginger (roasted), 2 tsp gud (jaggery), 2 tsp tea leaves. Let boil this mixer for 2 minute at low flame.
Add milk & let come at boiling state
It is last step and it’s crucial. Now add milk and just boil till first bubbles comes out. Then turn off the gas.
Note: If you boil more than once then chai becomes thicker inbetween.
Strain the chai in cups
Strain the tea in two sups using tea strainer. Now it ready to serve!
